Translators do documents only; interpreters do actual interpreting of speeches or conversations. These are very different skills and different jobs, and require different people. When hiring an interpreter, be sure to specify the type of service you need -- whether consecutive, simultaneous (most expensive) or whisperer (simultaneous translation to one or two people only). The costs, equipment, and personnel are different for each type.
Translation companies recommend that customers book the service in advance. Fees vary depending on the details of the work. They make an estimate and if the conditions and price are agreeable to both sides, they issue a contract before the work starts.
